MG's Roast Chicken Burritos


Ever wondered what to do with the leftover roast chicken? Don't give it to the cat, make a delicious Mexican meal for everyone in the house (or for the freezer if you live alone)

WHAT YOU'LL NEED

Olive Oil
1 Green Pepper
1 Red Chilli (Optional)
Roast Chicken
Salt
1 Lemon
1 Lime
Chipotle Powder
Paprika
Coriander
Kidney Beans
Retried Beans
4 large Burrito wraps

Assuming you've taken all the chicken off the bone and put it in a bowl, put a tablespoon of olive oil in a frying pan and wait for it to heat up. Slice a green pepper open, take out the seeds and dice it. Do the same to a red chilli (but only if you want this dish super spicy).

Fry the green pepper until it starts to soften......adding a half a teaspoon of paprika for about 8-10 minutes


Pour the chicken into the pan and stir until the it is coated with the oil and paprika. Add the chipotle powder and a handful of fresh coriander, chopped.....

Don't worry about the sell by date on the chipotle powder by the way. It doesn't go off for a long time......

Add the juice of one lemon and stir until the chicken absorbs all the spices and the liquid.

Prepare the juice of a lime and open a can of kidney beans (make sure they are just in water). Pour in the contents of the tin, including the water, and add the lime juice. If you've forgotten to add the salt, now is a good time.

By now the flavours of the spices and the other ingredients are infusing the chicken so you don't need to cook it for much longer. Leave it on the lowest heat possible and concentrate on the burritos.


Warm the overnight up to 200 degrees C and open the refried beans. Grease an oven dish with a little olive oil and place the a burrito wrap flat on it. Using a spoon spread a thin coating of the refried beans onto the burrito. Then spoon enough of the chicken mixture into it before wrapping it up. Seal it with a smear of the refried beans. This will seal the burrito and stop it from opening in the oven. Repeat until you've used up everything in the frying pan. Should make four big, fat burritos.

Serve with sour cream, grated cheese, guacamole and a salad.........
