MG's Noodle Paella


1 green pepper
I lemon
I garlic clove
I red chilli
Smoked paprika
150 grams cooking chorizo
175 grams chicken
Chicken stock

Olive oil
Pasta noodles

Dribble some olive oil into a large frying pan and heat slowly.
Dice a green pepper and a red chilli and fry over a medium heat.
When that begins to soften add a chopped garlic clove and stir.
Slice the cooking chorizo into small chunks while the vegetables cook and then add them to the pan.


After five minutes add a tablespoon of smoked paprika and the juice of half a lemon and stir through thorough.
Next add a bunch of fresh coriander, chopped, and the chicken. This can be either chicken breast or pre-cubed chicken.
As it's sizzling in the pan add the juice of the other half of the lemon and mix thoroughly.


Finally you want to add the noodles to the pan. There are a variety you can use but these are ideal and available in most supermarkets......


Add the noodles in two batches, 100 grams at a time and gently fold them through everything else. The noodles should pick up the colour from the chorizo ad darken.
Once all the noodles are in cover with boiling water and a chicken stock cube.


As the water cooks the noodles and evaporates it'll start to look like this. If you want to ensure all the water has disappeared pop the pan into a hot oven for 10 minutes.
It's a delicious and quick meal for two or three........serve sprinkled with fresh coriander.

And drink a nice
crisp glass of white wine with it.......
